- Key characteristics of Aged Shoumei: Tea leaf picking and production method: Made from mature leaves and stems picked in late spring or autumn. Aroma and taste: Young Shoumei has a simple and naive flavor, but as it ages, it develops a rich aroma reminiscent of honey or dates. It is characterized by a mellow sweetness and a long-lasting aftertaste. As it ages, the flavor becomes richer, sometimes evolving from a fresh, herbal note to a deeper aroma. Aging and storage: Aging deepens its flavor and aroma. If stored well, it can be kept for a long time, and it is said that "in its first year, it's tea; in its third, it's medicine; and in its seventh, it's a treasure."
- Shape: Square mochi-cha (compressed tea) form that's easy to store; break off only as much as you need.
- How to brew Shoumei : Place a block of tea leaves (one tea cake) without breaking it into a teapot or gaiwan. Pour in hot water at 95-100C, let the tea leaves settle, then discard the water ("washing the tea"). Afterward, pour in hot water again, wait 10-20 seconds, and then pour it into a teacup.
